Sundays aren’t Sundays without a hearty, healthy breakfast and all of us sat at the table. It’s my fav! A great Brunch idea. Missing these with friends and family.
Tomatoes are a major dietary source of the antioxidant lycopene, which has been linked to many health benefits, including reduced risk of heart disease and cancer. They are also a great source of vitamin C, potassium, folate, and vitamin K.
The tomato is actually a fruit that belongs to the nightshade family, along with aubergines, peppers and potatoes. Tomatoes are a powerhouse of nutrients and are also

- Can help reduce menopausal symptoms.. The list goes on.
Ingredients:
- Ghee/oil
- 1 onion
- Garlic
- Red chilli
- Red and yellow pepper
- 2 Tins of cherry tomatoes
- 4 eggs
- Fresh coriander
Method:
- In a pan add some organic ghee/rapeseed oil, and fry a finely chopped onion.
- Once soft and translucent, add a teaspoon of crushed fresh garlic, or more if you like things garlicky.
- Add a finely chopped red chilli. Remove the seeds if you don’t like it hot.
- Add a thinly chopped red/yellow pepper or I like half and half to give the sauce some colour and add some chopped coriander stalks too.
- Sweat this down for a few minutes and allow the flavours to infuse.
- Add 2 tins of tinned cherry tomatoes. I like using cherry tomatoes as they give a really lovely sweet intense flavour with no bitterness. #tesco
- Let this cook for a good 20 minutes. Make sure you keep checking on it and stirring to avoid burning.
- Transfer to a heavy duty deep frying pan.
- Make 4 hollows in the sauce.
- Very carefully crack 4 eggs in each of the dips you have made in the sauce.
- Put a clear lid on top and let it cook until it is to your liking. I like them runny but no gooey white bits!!!
- Scatter with loads of fresh coriander and serve in the pan for all to dip in with some crusty french bread.
You will not be disappointed! Heaven on a plate and soooooo nutritious.
