Oh my word! These were EPIC! I can’t take credit for these as my son no 2. He made these with my instruction but they were so delectable!
Creamy and gooey in the centre with a hard chocolate set top to crunch into. Hmmmm mmmm and only a few ingredients.
Now these are not low in fat, nor are they low in calories but they are chunks of deliciousness with unrefined sugars and nutritious ingredients. You only need a little to satisfy that sweet craving.
Ingredients:
- Top and bottom layer
- 1 bar of good quality dark chocolate (80%)
- 1 tbsp melted coconut oil
Centre:
- ½ cup 100% natural peanut butter unsalted
- ¼ cup good quality maple syrup
- 2 tbsp coconut oil
- Pinch of sea salt
Method:
- Use mini cake cases or mini chocolate moulds.
- Melt the chocolate with the coconut oil in a pan on gentle heat until silky smooth.
- Using a spoon pour some of the chocolate mixture into the bottom of the cases/mould.
- Place them in the freezer for 5-10 minutes for the chocolate to set.
- In another pan, add the peanut butter, maple syrup, coconut oil and sea salt and combine all until slightly meltable and liquidy to pour.
- Remove the cases from the freezer and, using a spoon, pour a layer of the peanut butter mixture and return to the freezer for another 5-10 minutes.
- Once set, pour the remaining chocolate to completely cover the peanut butter layer.
- Enjoy...or Leave in the fridge for later if you can wait!
