These bars are full of energy and will be great as a morning snack before the fasts start. Great for all as super nutrient rich and slow release carbohydrates to sustain you through the day.
Also great as a pre or post workout snack!
Ingredients:
- 250g oats
- 40g desiccated coconut
- 40g pumpkin seeds
- 40g flaked almonds/chopped almonds
- 200g pitted dates/date paste
- 85g clear honey
- 100g crunchy nut butter of choice. cashew/almond works well
- 1tbsp coconut oil/butter
- 1.5 tsp ground cinnamon
- 1.5 tsp ground cinnamon
- 1 tbsp cacao nibs
- 2 tbsp milled organic flax, sunflower pumpkin & gogi berry mix (linwoods)- optional
- Pinch of salt
Method:
- Line a brownie tray with greaseproof and preheat an oven to 160 degrees C.
- Combine the oats, coconut, pumpkin seeds and almonds and spread out on a large baking tray. Bake for 20 minutes, tossing occasionally, until golden ensuring it doesn't burn and is lightly toasted.
- Meanwhile, blitz the dates in a food processor to a smooth paste.
- Once smooth, place in a saucepan and add the honey, nut butter, coconut oil, cinnamon, 3tbsp water, cacao nibs, flax and salt.
- Once all combined, tip the mixture into the lined tin, smoothing the surface with the back of a spoon. Chill until firm and slice into bars/squares.
