Kale Pesto

Who loves kale?

I love having veg boxes delivered and being really experimental with what I make.

I've never used kale in pesto but this works really well!

Making a batch of pesto is a great way to use up kale and this pesto is great on pasta, pizza bases as a dip and however you fancy it!

Kale

  • Super nutrient-dense
  • Loaded With Powerful Antioxidants

  • Can Help Lower Cholesterol, Which May Reduce The Risk of Heart Disease
  • One of the best sources of Vitamin K

Ingredients :

  • 4 handfuls of Kale
  • A good glug of olive oil
  • 1 fresh lemon
  • 2 cloves of garlic
  • ¼ pine nuts (i used cashews as did not have any pine nuts) Walnuts would work well too.
  • ⅓ cup hard cheese
  • Sea salt
  • Freshly cracked black pepper.

Freestyling is the name of the game so if you don’t have something just use something similar.

Method:

  1. Wash the kale well and remove any of the hard stalks. Drain away any excess water.
  2. In a mixer (I used a nutribullet), add the kale, zest of the lemon and the rest of the ingredients and blitz until the mixture is a fine textured paste.
  3. Tate and adjust the seasoning if needed.
  4. For a runnier pesto add a little more oil or water.
  5. Enjoy
