Benefits of Quinoa
High in protein with a wide range of amino acid profile hence, good for vegetarians and vegans
High in fibre
Good source of manganese which is required for a healthy metabolism

Good source of iron, essential for good health
Good source of carbohydrate
Serves 4 as a side
Ingredients:
2 cups cooked cooled quinoa (cook according to packet instructions)
1 chopped cucumber
1 chopped carrot
1 chopped yellow/red pepper
Very Large handful of fresh mint
Very Large handful of fresh coriander/parsley
1-2 ripe avocado depending on size
Pomegranate seeds
Handful pumpkin seeds
Handful of chopped walnuts
Cracked black pepper
Pinch of rock salt
Can add black beans too for an added fibre, nutrient boost
Dressing:
Juice of lemon
1 tsp apple cider vinegar
2-3 tbsp of organic extra virgin olive oil (use a good oil)
Zaatar
Cracked black pepper
Method:
Mix all the ingredients together and add the dressing to it and stir.
Serve immediately
